I’m DONE Missing Out: Gluten-Free Viral Dubai Chocolate Bar 🍫✨

Okayyyy—this one is next level. You’ve definitely seen this viral Dubai chocolate bar all over TikTok and Instagram, right? It’s crunchy, gooey, chocolatey, and looks almost too good to be true. So naturally, I thought, “Well, guess I can’t have that…”

THINK AGAIN, because, welcome to I’m DONE missing out - where I make viral food trends gluten free!


INGREDIENTS:

  • 10 oz dark chocolate chips (60% cocoa or higher – I used Enjoy Life for a celiac-safe, dairy-free option)

  • 1 tablespoon neutral oil (avocado or coconut oil works well)

  • 1 ½ cups rice crisp cereal, crushed (double-check the box says gluten free - I used Whole Foods’ brand as it is Beyond Celiac!)

  • 2 cups raw, unsalted pistachios, shelled

  • 2 tablespoons maple syrup

INSTRUCTIONS

Step 1: Melt the Chocolate

Combine the chocolate chips and neutral oil in a microwave-safe bowl. Heat in 30-second bursts, stirring in between, until fully melted and silky smooth—this should take about 1 minute total.
Spoon 2–3 tablespoons of the melted chocolate into your silicone molds or loaf pan, spreading it into an even layer using a pastry brush or the back of a spoon. I used parchment paper and freehanded it! Pop the molds into the freezer to set while you move on to the filling.

Step 2: Make the Filling

Start by making your pistachio butter. Add the raw, shelled pistachios to a food processor and blend until smooth and creamy. This will take 10–15 minutes depending on your processor—pause occasionally if the machine gets warm.
In a mixing bowl, combine the pistachio butter, cereal, and maple syrup. Stir until the mixture holds together.

Step 3: Assemble

Remove your chocolate-lined molds from the freezer and scoop the filling mixture on top. Use the back of a spoon or a small spatula to press the filling down firmly and evenly. Pour the remaining melted chocolate over the top, spreading it out to fully coat the surface. Smooth it out as best you can for that clean, glossy finish.

Step 4: Freeze & Finish

Place the molds back into the freezer for another 10–20 minutes or until everything is fully set.
Once firm, pop the bars out of the molds, sprinkle with flaky sea salt (if desired), and let them sit at room temperature for a few minutes before digging in.

So there you have it - a GLUTEN FREE viral Dubai Chocolate Bar! For added fun, we also made these into balls and covered with chocolate instead (and wow!).
